Christmas: Serina kaker


250 g flour (8.8 oz.)
2 tsp. baking powder
2 tsp. vanilla sugar
150 g butter (5.3 oz.)
100 g sugar (3.5 oz.)
1 egg (blend the white and the yolk)

Mix flour, baking powder and vanilla sugar.
Crumble the butter in the flour mix.
Add sugar and the egg (blended).
Kneed the dough well - I use my mixer for this, with the K-attachment, but this can be done very well by hand as well.
Make finger thick "sausages" and cut in equally big pieces.
Roll them into round balls, and with a fork, flatten them by making a criss-cross pattern.
Either dip in or brush with egg white, then lightly press the cake in pearl sugar and/or finely chopped almonds.
Bake in a 190 °C (375 °F)oven for 10 minutes or until light golden color.
Cool on a rack and keep in a (tin) box with tight lid for about 1 month.
