All about bread


It is very common in Norway to bake bread at home, and the most popular bread is the whole wheat bread: (light) brown in color, with lots of grains, and a nice crust.

Whole wheat bread:

Grovbrød - the generic term for whole wheat bread
Fullkornbrød - whole wheat bread with whole wheat grains
Kneipp brød - a classic. The secret recepie of a doctor Kneipp (German?) has many followers even today, .
Birkebeiner brød - a brand name, one of the popular breads
Havreklibrød - whole wheat bread with oatbran

White bread:

Loff - the generic term for white bread
Frøloff - a round loaf with poppy seeds
Rundstykker - rolls. These can also be made of whole wheat.
Baguette - like in French! Though in Norway they are usually shorter than the French bread
Horn - the same shape as croissants, but not the same buttery dough. Horns are made of approximately the same dough as loff or rundstykker.
Tebriks - a very fine roll, flaky like a French croissant but not as buttery.

Sweet breads:

Boller, Hveteboller - a children's favorite, this is a sweet wheat bun
Rosinbolle - the same as bolle, but with raisins inside too
Skolebrød - a classic: bigger than bolle, with a yellow "egg yolk" on top, spread with sugar frosting and sprinkled with coconut
Skillingsbolle - a speciality of Bergen, a big cinnamon roll, either sprinkled with sugar or drizzled with sugar glaze. These are similar to the "Danish" that Americans love, but Norwegians like them less sugary.

Others:

Flatbrød - not really a bread because it is not made with yeast, but is nevertheless named bread, and flat because it really is. It looks like a sheet of handmade paper... It's dry and doesn't taste much. It is usually consumed with dinner, to accompany soup, lapskaus or fenalår.
It is also possible to spread butter on it and eat it like bread - a childhood memory of mine is spreading butter on flatbrød and drizzling sugar on it and make a sandwich with two or three "sheets". Or breaking it in small pieces in a bowl and add milk and sugar - another cereal meal.
Lompe - thin, flat, soft bread made from potatoes. Looks like a pancake or tortilla, traditionally served with hotdogs. Some people even enjoy them spread with butter and sprinkled with sugar for a sweet treat!
Vafler - waffels, commonly enjoyed with jam or brunost.
